  Mizuno Kintaro Tomohiro is a Japanese plant-based confectionery artist, theorist, and educator. In Japanese, the sound KASHI holds several entirely different meanings: confectionery, lyrics, making the unseen visible, and a flaw, wound, or imperfection. At the age of thirty, he founded the plant-based confectionery brand GRACEFUL SWEETS. In pursuit of beauty, exquisite flavor, and a graceful finish that leaves no heaviness in the body, he developed his own theory of plant-based confectionery. Rather than imitating conventional pastry, he rebuilt it from the nature of plant-based ingredients themselves. Then, in 2026, he came to a realization. Something fundamental had always been missing from the world of GRACEFUL SWEETS. It was the nameless melodies that had been playing within him since childhood. Confectionery is not experienced through sight, touch, smell, and taste alone. When music becomes part of the experience, it can transform the perception of flavor, the passage of time, and even the lingering sensations that remain on the palate. From this realization came GRACEFUL SONIC SEASONING: an auditory confectionery technique that uses music to complete the flavor and lingering finish of a confection. Music is not merely an accompaniment to confectionery. Like aroma and texture, it is an ingredient that helps compose the experience of deliciousness itself.
