After years of training at one of Japanes renowned bakeries, Chef Bessho devoted himself to creating the perfect croissant using only the finest ingredients: 100% French flour, AOP cultured butter from the Charentes-Poitou region, more than 48 hours of slow fermentation, and even French mineral water.

Never compromising on quality or craftsmanship, he continues his lifelong pursuit of what he believes is the truly perfect croissant.

His journey, however, was far from easy.

As rising ingredient costs and the pressures of running a bakery threatened to extinguish his passion, two heartfelt letters from loyal customers arrived giving him the courage to light the oven once again.
